Marinate:
Toss 500g of cauliflower florets and a drained tin of chickpeas in 2 tbsp olive oil and a generous pinch of chilli. Spread on a baking tray or heat a cast-iron pan to high.
Sear:
Roast or pan-sear until the cauliflower edges are deeply charred and the chickpeas are crispy. The high heat will caramelise the natural sugars in the vegetables, providing a sweet, smoky base.
Finish:
