Ingredients
• 1 cup coconut yoghurt
• 1–2 tsp maple syrup
• ¼ tsp lemon myrtle powder
• Fresh seasonal fruit

Method

  1. In a bowl, combine the coconut yoghurt, maple syrup and lemon myrtle powder.

  2. Stir thoroughly to evenly distribute the citrus flavour.

Lemon Myrtle Tea

• 2 tsp lemon myrtle tea
• 2 cups hot water
• 1–2 tsp maple syrup (optional)

Method

  2. Strain the tea and allow it to cool slightly.

    • Juice of ½ lemon

Method

  1. Preheat oven to 180°C.

  2. Chop vegetables into evenly sized pieces for consistent cooking.

  3. Place vegetables in a large bowl and drizzle with olive oil.

  4. Add the Lemon & Garlic Rub and toss thoroughly to coat all pieces evenly.

  5. Spread vegetables in a single layer on a lined baking tray.
