Featuring Wildhorse Homestead Wildgrown Whole Dried Chillies
Infuse:
Add 2–3 Whole Dried Chillies to 2 tbsp of olive oil in a pan over medium heat. Allow them to “bloom” for 1 minute until they become fragrant and darken slightly.
Sear:
Increase heat to high and add 500g of large green prawns and a pinch of salt. Sear for 2 minutes per side until charred and pink. The whole chillies will infuse the cooking oil with a deep, smoky aroma.
Finish:
Remove from heat and finish with a squeeze of fresh lime and a sprinkle of sea salt. The infused oil provides a sophisticated, layered heat that perfectly complements the sweet prawns.

Our whole chillies allow you to control the heat through infusion time and preparation. Use this guide to find your balance:
Level 1: The Gentle Glow (Mild/Infused)
The Method: Add 1–2 whole pods to your pot or pan and remove them before serving.
The Result: A subtle, aromatic warmth that scents the dish without a sharp bite.
Level 2: The Homestead Heat (Medium/Vibrant)
The Method: Snip 2–3 pods into large pieces (seeds included) and cook into your dish.
The Result: A noticeable, rustic kick that brings the sundried flavour to the forefront. Perfect for stir-frys and pasta sauces.
Level 3: The Wildfire (Hot/Bold)
The Method: Finely crush 3+ pods by hand or mortar and pestle directly into the dish.
The Result: For the true heat seeker. Releasing all the seeds and dried flesh provides a bold, fiery punch that celebrates the raw intensity of the Queensland sun.
Homestead Tip: When handling whole dried chillies, remember that the heat lives in the seeds and internal ribs. Wash your hands thoroughly after crushing them, or wear gloves to avoid “homestead hands” (chilli burn)!
