This rub is designed to be aromatic first, with a steady, building heat. Use this guide to find your perfect balance:
- Level 1: The Zesty Hum (Mild)
- The Ratio: 1 teaspoon per 500g of protein.
- The Result: High citrus aroma with a very gentle warmth. Excellent for white fish or light summer salads.
- Level 2: The Homestead Heat (Medium/Vibrant)
- The Ratio: 2–3 teaspoons per 500g.
- The Result: The perfect balance. The heat of the chilli steps up to meet the lemon myrtle, creating a vibrant, mouth-watering tingle.
- Level 3: The Wildfire (Hot/Bold)
- The Ratio: 1.5+ tablespoons (Apply as a heavy dry crust).
- The Result: A bold, sensory explosion. The spices caramelise into a fiery, citrus-heavy bark. Ideal for slow-roasted meats or thick steaks.
