“Bush Fire” Charred Prawns
Featuring Wildhorse Homestead Wildgrown Sundried Chilli Powder
Marinate:
Toss 500g of large green prawns in 1 tbsp olive oil, 1 tsp of Wildgrown Sundried Chilli Powder, and a pinch of salt. Let sit for 10 minutes to allow the sundried intensity to penetrate the prawns.
Sear:
Heat a cast-iron pan or BBQ grill to high. Sear the prawns for 2 minutes per side until charred and pink. The fine grind of our powder ensures an even, caramelised crust without grainy texture.
Finish:
Remove from heat and finish with a squeeze of fresh lime. The citrus acidity perfectly cuts through the deep, smoky heat of the wildgrown chillies.

Our sundried chilli powder is potent and pure. Because it is small-batch and concentrated, a little goes a long way. Use this guide to tailor the heat to your palate:
Level 1: The Gentle Glow (Mild/Family Friendly)
The Ratio: 1/4 teaspoon per 500g of protein or veg.
The Result: A warm, background hum that enhances the natural flavours of your ingredients without overpowering them. Perfect for slow-cooked bolognaise or mild taco nights.
Level 2: The Homestead Heat (Medium/Vibrant)
The Ratio: 1/2 to 1 level teaspoon per 500g.
The Result: The classic “kick.” This level brings the sundried complexity to the forefront, offering a sharp, clean heat that lingers pleasantly. Ideal for chilli con carne, spicy stir-frys, or our “Bush Fire” prawns.
Level 3: The Wildfire (Hot/Bold)
The Ratio: 1 heaped teaspoon + (Add to taste).
